PAN CON TOMATE,
PROCCIUTTO AND PARMESAN
The main reason why I like this dish so much is
because of how ridiculously simple it is to make.
If there’s one thing I’ve always loved and admired
from the food cultures in countries like Spain, Italy
or France, it’s their respect for the seasons and the
products they use. This is the proof that when you
have quality ingredients, you can do minimum effort,
for maximum satisfaction. There’s only a few
ingredients so make sure to choose wisely when
grocery shopping. Spend that extra buck on organic
garlic and tomatoes, stop by the baker and get a nice
fresh loaf of bread. If you prefer Asiago cheese and a
Spanish cured ham instead, go for it, this recipe is just
me merging the best of 2 countries again, in order to
come up with the most amazing final product. That’s
why using high quality Cannabis is also very
important, it’s just like the saying “You should never
cook with wine you wouldn’t drink” expect that in this
case, it’s “you should never cook with weed you
wouldn't smoke”. Using specific Cannabis strains
for specific meals is just like pairing wine with food.
Some strains have very strong Terpenes profiles and
you should take advantage of this to try and figure
out with which ingredients you could pair it with.
3 Large slices of bread cut from a fresh loaf
1 Large ripe tomato
1 Tablespoon of Cannabis Infused Olive Oil
1 Clove of garlic
Fresh cannabis flower to garnish
Extra Virgin Olive Oil for brushing
Prosciutto (3 slices)
Salt & Pepper to taste
Brush slices of bread with the
extra virgin olive oil generously.
Toast in a pan or on a grill on a
medium high heat until crispy and golden.
Immediately rub the clove of
garlic on both sides of the bread
while it’s hot and crispy.
Remove the core of the tomato and
over a bowl, grate the tomato using
a regular cheese grater to extract
only the pulp, most of the skin should
remain in your hands. Discard any
excess of tomato water from the bowl
if tomato is too ripe.
Dress the tomato with the Cannabis
olive oil, fresh cannabis flower, salt
Spread the tomato jam on your
warm toasted bread.
Grate Parmesan cheese on top and
finish with a nice slice of prosciutto.
